Anthriscus cerefolium, commonly known as Chervil, is an elegant and aromatic herb that adds a delicate, anise-like flavour to culinary creations. Often referred to as “gourmet's parsley,” its feathery, bright green leaves are perfect for fresh use in salads, soups, sauces, and even as a garnish.
 
The name Anthriscus derives from the Greek word for "chervil," while cerefolium is thought to refer to the plant's parsley-like appearance.
 
Chervil is an essential herb in French cuisine, particularly in the famous fines herbes blend, and is appreciated for its subtle flavour that enhances rather than overpowers dishes.
 
This versatile herb thrives in cool, moist conditions and prefers well-drained, fertile soil. Chervil Simple grows to a height of 30 - 45 cm, making it perfect for herb gardens, containers, or shaded spots in the garden.
 
Its white, lacy flowers appear in late spring to early summer, attracting pollinators such as bees and butterflies, while the leaves remain tender and flavourful for culinary use.

Chervil Simple requires minimal care once established. Water regularly to keep the soil consistently moist, but avoid waterlogging. Harvest the leaves throughout the growing season for the best flavour, and allow some plants to flower and go to seed if you wish to attract beneficial pollinators. Chervil is best used fresh, as its flavour diminishes once dried.
 
Sowing Instructions
 
Indoors: Sow seeds in trays or pots filled with moist, well-drained compost from March to April. Lightly cover the seeds with compost and keep at 18-21°C. Transplant seedlings into individual pots when large enough to handle, and harden off before planting outdoors after the last frost.
 
Outdoors: Sow directly into prepared, weed-free soil from April to May. Lightly cover the seeds with soil and keep moist until germination occurs. Thin seedlings to the recommended spacing for healthy growth.
