Thyme (Thymus vulgaris) is a hardy, aromatic herb with a rich, earthy fragrance and a distinctive savoury flavour.

 

This variety is a staple in Mediterranean cuisine, perfect for seasoning roasted vegetables, meats, soups, and stews. A low growing, drought tolerant perennial, thyme thrives in well-drained soil and full sun, making it an excellent choice for herb gardens, rockeries, borders, and container planting. It forms a dense, spreading mat that can also be used as fragrant ground cover. Once established, it requires minimal care and will return year after year.

Start seeds indoors from February to May in trays or small pots filled with fine compost. Lightly press seeds onto the soil surface without covering them, as they need light to germinate. Keep the temperature at 18–21°C and the soil moist. Transplant outdoors once seedlings are well established and after the risk of frost has passed.

 

Direct sow from April to July in a sunny, well-drained location. Scatter seeds thinly on the surface, press gently into the soil, and keep moist. Thin seedlings as needed, ensuring good air circulation to prevent disease.
