Tarragon (Artemisia dracunculus) is a fragrant herb known for its aromatic, narrow, green leaves and delicate, spicy flavour that enhances a variety of dishes, particularly in French cuisine.
 
The plant produces slender stems adorned with fine, lance shaped leaves, which are highly prized for their distinctive aniseed like taste. Tarragon is a must have for herb gardens, providing fresh leaves for culinary use while also offering a lovely visual appeal in herb beds or containers.
 
This hardy perennial thrives in well-drained, moderately fertile soil and full sun, where it reaches a height of around 60 – 90 cm. Tarragon grows best in a sunny position and is drought-tolerant once established, making it ideal for low maintenance herb gardens. It also attracts pollinators, including bees and butterflies, contributing to a more biodiverse garden. Tarragon is perfect for adding to salads, sauces, and marinades, or for seasoning meats, fish, and vegetables.
 
Tarragon is also known for its medicinal uses, with leaves believed to have a calming effect and to aid digestion, making it an herb with both culinary and therapeutic value. When in full bloom, the plant produces small, yellow green flowers that are subtle and unassuming, allowing the focus to remain on the fragrant foliage.

Start seeds indoors from February to April. Fill seed trays or pots with fine, well-draining compost, sowing seeds thinly on the surface and lightly covering with a thin layer of compost. Keep the temperature between 18-21°C and ensure the soil remains moist until germination occurs. Once seedlings are large enough, transplant them into individual pots and harden off before planting outdoors.
 
Direct sow from late April to May in a sunny, well-drained location. Scatter seeds thinly on the surface and gently press them into the soil. Water lightly and thin seedlings as necessary to ensure proper spacing and healthy growth.
 
Tarragon offers both culinary and ornamental value, with its fragrant leaves perfect for adding depth and flavour to dishes. This hardy herb is a great addition to any herb garden, thriving in full sun and providing a continuous supply of fresh leaves for seasoning and flavouring.
